Description

Creamy peach chia pudding layered with fresh peach puree and topped with juicy peach slices for a refreshing make-ahead breakfast or dessert.


Ingredients

  • 3 medium ripe peaches, peeled and sliced
  • 1/2 cup chia seeds
  • 2 cups almond milk
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon honey
  • Extra fresh peach slices for topping
  • 1 teaspoon chia seeds for garnish


Instructions

  1. In a mixing bowl, whisk together almond milk, chia seeds, maple syrup, vanilla extract, and Greek yogurt until fully combined.
  2. Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  3. Blend the peaches with honey until smooth.
  4. Divide half of the chia pudding mixture into serving glasses or jars.
  5. Add a layer of peach puree over the pudding.
  6. Top with the remaining chia pudding mixture.
  7. Cover and refrigerate for at least 6 hours or overnight until thick and creamy.
  8. Before serving, top with fresh peach slices and chia seeds.

Notes

  • Use very ripe peaches for the sweetest flavor.
  • Chill overnight for the thickest texture.
  • Oat milk or coconut milk can replace almond milk.
  • Store covered in the refrigerator for up to 4 days.
