- 3 medium ripe peaches, peeled and sliced
- 1/2 cup chia seeds
- 2 cups almond milk
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup plain Greek yogurt
- 1 tablespoon honey
- Extra fresh peach slices for topping
- 1 teaspoon chia seeds for garnish
Instructions
- In a mixing bowl, whisk together almond milk, chia seeds, maple syrup, vanilla extract, and Greek yogurt until fully combined.
- Let the mixture sit for 5 minutes, then stir again to prevent clumping.
- Blend the peaches with honey until smooth.
- Divide half of the chia pudding mixture into serving glasses or jars.
- Add a layer of peach puree over the pudding.
- Top with the remaining chia pudding mixture.
- Cover and refrigerate for at least 6 hours or overnight until thick and creamy.
- Before serving, top with fresh peach slices and chia seeds.
Notes
- Use very ripe peaches for the sweetest flavor.
- Chill overnight for the thickest texture.
- Oat milk or coconut milk can replace almond milk.
