- 1/4 cup water
- 1/4 cup light corn syrup
- 1/2 cup cornstarch
- 12 medium fresh strawberries, washed and thoroughly dried
Instructions
- Prepare a silicone mat, candy thermometer, and all ingredients.
- Combine sugar, water, and corn syrup in a heavy-bottom saucepan.
- Cook over medium heat until the mixture reaches 265°F (129°C).
- Pour onto a silicone mat and cool until safe to handle.
- Form into a ring and repeatedly stretch and fold while dusting with cornstarch until thousands of fine strands form.
- Continue stretching until the candy becomes thin and silky.
- Wrap portions of the candy strands around each dried strawberry.
- Serve immediately for the best texture.
