- 4 medium sweet potatoes
- 1 pound lean ground turkey
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- 1/4 cup sliced green onions
- 2 tablespoons chopped fresh parsley
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Place sweet potatoes on a baking sheet and bake for 45 minutes until tender.
- Heat olive oil in a large skillet and cook ground turkey until browned.
- Add black beans, corn, diced tomatoes, garlic powder, paprika, salt, and black pepper. Cook for 5 minutes.
- Slice baked sweet potatoes lengthwise and scoop out a small portion of the flesh.
- Mix the scooped sweet potato into the turkey mixture.
- Fill the sweet potato shells with the turkey mixture.
- Top with shredded cheddar cheese.
- Bake for 10 more minutes until the cheese melts.
- Garnish with green onions and parsley before serving.

- Choose similarly sized sweet potatoes for even cooking.
