Description

Tender baked sweet potatoes filled with seasoned ground turkey, black beans, corn, tomatoes, and melted cheddar cheese for a hearty and satisfying meal.


Ingredients

  • 4 medium sweet potatoes
  • 1 pound lean ground turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup sliced green onions
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place sweet potatoes on a baking sheet and bake for 45 minutes until tender.
  3. Heat olive oil in a large skillet and cook ground turkey until browned.
  4. Add black beans, corn, diced tomatoes, garlic powder, paprika, salt, and black pepper. Cook for 5 minutes.
  5. Slice baked sweet potatoes lengthwise and scoop out a small portion of the flesh.
  6. Mix the scooped sweet potato into the turkey mixture.
  7. Fill the sweet potato shells with the turkey mixture.
  8. Top with shredded cheddar cheese.
  9. Bake for 10 more minutes until the cheese melts.
  10. Garnish with green onions and parsley before serving.

Notes

  • Choose similarly sized sweet potatoes for even cooking.
