Description

A refreshing summer salad that brings together juicy watermelon, crispy halloumi, fresh mint, and toasted pine nuts, all tied together with a splash of lemon and olive oil.


Ingredients

Scale
  • 4 cups watermelon, cubed
  • 225 grams halloumi cheese, sliced
  • 1/2 cup fresh mint leaves, torn
  • 2 tablespoons pine nuts, toasted
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • Pinch of salt
  • Black pepper, to taste


Instructions

  1. Heat a non-stick skillet or grill pan over medium-high heat until hot.
  2. Cube the watermelon and place it in a mixing bowl. Add a pinch of salt and gently toss. Set aside.
  3. Add a bit of olive oil to the skillet and sear halloumi slices for 2–3 minutes per side until golden brown.
  4. Add grilled halloumi to the bowl with watermelon. Toss in mint leaves and toasted pine nuts.
  5. Let the salad sit for 5 minutes so flavors blend.
  6. Drizzle with olive oil and lemon juice. Add black pepper to taste.
  7. Serve immediately while halloumi is still warm.
